Key Lime Pie Dip Cup
Bring on those summer vibes and take me back to Key West. What kind of desserts do you think of when summer comes to mind? I know I can name at least two and Key Lime Pie makes the top of the list. But strawberry shortcake will always have my heart as #1, recipe coming soon. However, in honor of my sister's birthday coming up I decided to make this Key Lime Pie Dip Cup. See, my sister first introduced this recipe to me a few years back. And because she's the baker, cook, and pastry chef of the family I take what she says as gold. She also lived in the Miami area for a few years which also gives her major tropical vibes cred. But....I love making my food fun, easy and good so I decided to switch it up a bit and add my flair while also keeping her one secret weapon Nellie & Joe's Famous Key Lime Juice. Key Lime Pie Dip Cup - 1 serving
Here’s what you need:
CRUST
1 1/2 CUP..........................General Mills Cinnamon Toast Crunch
1 Tablespoons..................White Sugar
3 Tablespoons..................Butter melted (microwave in 7 min increments until melted)
Pulse all ingredients together in a food processor or bullet then pat out to an even crust on parchment paper, Bake 5-8mins in shallow dish
KEY LIME MIX
Bake 8-10min
1/2 can............................... Sweetened Condensed Milk
1/3 Cup............................... Greek yogurt
1 1/2 Tablespoons............... Nellie & Joe’s Famous Key Lime Juice
1 Teaspoon......................... Vanilla Extract
Mix all ingredients together until no lumps, pour onto crust and bake, pull out, let cool, then place in refrigerator for 2-3hrs
WHIPPED CREAM
1 1/2 Cup............................ Heavy Whipping Cream
2 Tablespoons................... Powder Sugar
1 Teaspoon......................... Vanilla Extract
Whip w/ beater or hand whisk until stiff peaks
Chill 3hrs,
